Use the Azure AD field filter if you want a signature to be added to an email only if the sender matches very specific criteria.
You can also choose to apply your server-side signature only when emails are sent to specific recipients.

Server-side signatures are added to messages while they travel through Microsoft's Azure cloud, regardless of what device they were sent from or to.
End users can preview their server-side (cloud) signatures in real time in Outlook, Outlook on the web (OWA) and Outlook for Mac by using the modern Web Add-in, which can be deployed centrally from the Microsoft 365 admin center.
In client-side mode, signatures are made available to users in Outlook via a dedicated add-in. Email signatures are inserted to emails automatically by the program but can be manually selected by users as well.
